If you're a new vegan and looking for creative cooking ideas, a long-time vegetarian in a cooking rut, or simply veg-curious and exploring ways to expand your culinary horizons, cooking vegan food fast, fun, and flavorful with two gadgets: the pressure cooker (or Instant Pot) and the air fryer. Join Colorado-based - and former Westchester resident - vegan culinary instructor and cookbook author JL Fields for a 90-minute class she dubs "pressure cooking and air frying 101." Recipes and food samples will be provided.

Bonus: The pressure cooker (8-in-1 multicooker) and air fryer used for the demonstration class will be given away at the conclusion of the class to two lucky students! 

BIO

JL Fields is the founder and culinary director of the Colorado Springs Vegan Cooking Academy. She is a vegan lifestyle coach & educator, Food for Life instructor, and a chef instructor in the culinary program at the University of New Mexico-Taos. JL is the author of The Vegan Air Fryer: The Healthier Way to Enjoy Deep-Fried Flavors and Vegan Pressure Cooking: Delicious Beans, Grains, and One-Pot Meals in Minutes. She is the co-author of Vegan for Her: The Woman's Guide to Being Healthy and Fit on a Plant-Based Diet. JL produces and hosts the weekly radio program Easy Vegan and writes the monthly vegan dining review for the Colorado Springs Gazette. Chef Maria Reina is back in our farm kitchen and ready to lead you in creating a three-course dinner using just-harvested ingredients from the field. Prepare to chop, dice and sauté your way to a delicious family-style dinner. All you need is an apron, a favorite beverage and an enthusiasm for cooking! Dinner will include a soup, main course, side dish and dessert. 

Chef Maria Reina is a graduate of the International Culinary Center, where she trained in NYC and at the prestigious Italian cooking school ALMA-La Scuola Internzionale di Cucina Italiana, in Parma.

Together you and your partner will learn how to cook from scratch several healthy and delicious restaurant-quality recipes.

The class is limited to 10 couples, and online registration is required, $100 per couple, BYOB.

Homemade Pasta: Saturday April 8, 5:00pm - 7:30pm Register Here

Join Chef Maria Reina kicking off her fourth year teaching cooking classes at Hilltop. This class will learn the fine (and easy!) art of pasta making. You will make your own pasta dough for an herb-infuse short pasta and a vegetable infused fettuccine. To finish you will make a show stopping chocolate pasta with two difference sauces, one sweet and one savory. Bring an apron and bottle of chianti for an evening of delicious fun.

Join Chef Maria for an egg-cellent class using our very own Hilltop eggs. You will learn the fine (and very easy!) art of poaching. She will also show you a great cooking tip for perfect hard boiled eggs. Using some of our gorgeous leafy greens we will also bake a strata and cook a frittata. Bring an apron and let's cook eggs! All you need is an apron and enthusiasm for cooking!

Work with Chef Rinku to put together a classic Indian meal. In this class you will discuss the elements of spicing and work together to put together a creative Indian meal and learn how to plate it the traditional way. You will learn about making spice blends, how to work with farm stand ingredients and balance your palate.
